Turkey in 10 days, and the three mornings you need in Cappadocia
Istanbul, Cappadocia and the Aegean in 10 days. Why one balloon morning is a coin flip, and how many nights it actually takes to fly.

Ten days in Turkey is Istanbul four nights, Cappadocia three, the Aegean three, with short internal flights between them.
The number worth arguing about is the three in Cappadocia, because almost every published itinerary says two, and two is a bet you will probably regret. Roughly one Cappadocia balloon morning in three does not fly.

Cappadocia's balloons are the reason most people go, and they are cancelled far more often than the photographs suggest.
About 35 per cent of mornings across the year do not fly. The Turkish Civil Aviation Authority makes the call at dawn on surface and altitude winds and visibility, and it is seasonal: January runs about 71 per cent cancelled, while June to September often exceeds 85 per cent success.
So the question is not whether to book a balloon. It is how many mornings you have given yourself.

Two nights gives you one or two attempts. Three gives you three. That extra night costs one hotel night and takes your odds from a coin flip to near certainty, and it is the difference between the trip you booked and the trip you tell people about.
Book the flight for your first morning, not your last. A cancellation on day one leaves you two more attempts. A cancellation on your last morning leaves you with a refund and a hole where the reason for the trip was.
Days 1 to 4: Istanbul
Four nights, and it is not generous. Istanbul is two continents and about sixteen million people.
Day 1: arrive and take the ferry. The Bosphorus commuter boats are public transport that happens to be the best introduction to the city, and a crossing to Kadıköy on the Asian side costs the same as a tram ride.
Day 2: the historic peninsula, early. Hagia Sophia, the Blue Mosque, the Basilica Cistern, the Topkapı Palace. That is a full day and it is the only day of the trip that should be a checklist.
Day 3: Beyoğlu and the modern city. Walk down İstiklal, take the funicular or the stairs down to Karaköy, and spend the afternoon in Balat, which is the old Greek and Jewish quarter and the most interesting walking in the city.
Day 4: the Grand Bazaar and the Spice Bazaar in the morning, then a long Bosphorus ferry up towards the Black Sea in the afternoon.
Where to stay in Istanbul has the neighbourhoods. The short version: Sultanahmet is convenient and touristy, Karaköy and Cihangir are where you want to eat, and the tram line matters more than the postcode.
Days 5 to 7: Cappadocia
Fly to Kayseri or Nevşehir, about an hour and a half, and transfer 45 minutes to an hour to Göreme.
Day 5: arrive, Göreme Open Air Museum, and the sunset from Red Valley or Love Valley. Göreme, Ephesus, Hierapolis and Topkapı are all state sites sold through the Ministry of Culture's own ticketing system, which is also where the multi-site Museum Pass lives. If your ten days include four or more state sites, run the pass price against the individual entries before you buy either.
Day 6: balloon at dawn if it flies. Then the Ihlara valley walk or the underground cities at Derinkuyu or Kaymaklı, which are eight levels deep and are not for the claustrophobic.
Day 7: balloon again if the first two did not fly. Otherwise the Rose Valley hike, the pottery at Avanos, or a genuinely slow day, which Cappadocia rewards.

Days 8 to 10: the Aegean
Fly to İzmir, about an hour and a quarter.
Day 8: Ephesus, which is the best-preserved classical city in the Mediterranean and is an hour from İzmir. Go at opening; there is very little shade and it is a large site.
Day 9: Pamukkale, the white travertine terraces, three hours inland from İzmir, with Hierapolis on the ridge above it. This is a long day and it is worth it, but if the trip has been busy, swapping it for a second day on the coast is a defensible call.
Day 10: Alaçatı or Çeşme on the peninsula west of İzmir, then the flight home. Or return to Istanbul for a final night if your international flight leaves from there, which is usually the case.

If two internal flights feels like too much for ten days, cut the Aegean and give the days to the other two:
Istanbul five nights, Cappadocia four, and one day trip out of Istanbul to the Princes' Islands or to Bursa, which is two and a half hours by ferry and bus and was the first Ottoman capital.
That version has one flight in it, more time in each place, and four balloon mornings, which takes the odds above 98 per cent. It is the better trip for a first visit and the worse one for a photograph collection.
What to skip
Two nights in Cappadocia. The entire first section.
Booking the balloon for your last morning. Same reason.
A hire car in Istanbul. The traffic is genuinely among the worst in Europe and the tram, metro and ferries reach everything.
Trying to add Antalya or the Lycian coast. They are excellent and they are another eight hundred kilometres. A coastal trip is its own ten days.
Buying a carpet on day one. Not because carpet sellers are dishonest, but because you will not know what you are looking at until day six, and the good shops are still there on day six.
Pamukkale in the middle of the day in summer. White stone, no shade, and thirty-plus degrees.
